This thing is a lot deeper than it looks on this photo. But that is good so that it can dip down into the pot with the water. I used this to make so chocolate covered strawberries. Worked great. And it’s non-stick so the chocolate came out easily.

I had become rather disgusted with trying to set stove temperature hot enough to continue cooking, but not so hot as to bond (=glue) food to the pan bottom. It was too critical, and different foods required different settings, it seemed.

I’d been contemplating getting a true double boiler (the home version of a steam-jacket cooker?), and, browsing for one, came across this. I didn’t know there was such a thing.

Bought it, washed it, tried it, and Happiness Returned. The cover for the pan sits nicely above the modest amount of food I usually cook (hot cereal for myself, for instance, or Near East brand dry pilafs and couscous). Ridges keep the cover from tilting.

A couple of points: my large measuring cup is plastic, and probably not intended for use with boiling water. The “ring corrugations” serve as slightly-crude graduations; if I really need to know, I’ll measure the needed amount of water, pour it in, then note where it reaches, and pour it out again. (I filter my water.)

Idea is to boil more water than needed for the food, and when it’s hot enough, carefully pour the correct amount into this adapter. (I surely don’t want to wait for cold water to heat via steam!) For what I cook, I typically add most of the food once the water’s boiling. I do waste some filtered water (until I become more clever :) , but that’s not serious.

OK, as to the the gadget itself. Quite well made, in the USA! Both inside and outside are non-stick; the inside is dark, while the outside is lighter. It’s non-magnetic. One should be careful of the non-stick surface, of course. It’s fairly thin, so it heats and cools quickly, but is still thick enough to keep its shape (inherently rigid) with ordinary handling; it’s not frail. It’s also light in weight — just right.

Set into a pan, it fits mine just fine; apparently, there are only a few standard diameters of most pans. The seal against the top of the pan is casual; the steam might be at a slight pressure (which would make it a bit hotter), but this can simply be forgotten about. (There’s no groove to let the steam out.)

One really-significant matter: its bottom is round, and it can easily tip over! Have a bowl ready to use as a stand, if for some reason you need to remove it from the pan. So far, this attribute has been no problem. One could scald one’s legs and or feet by being careless, though, but I’d say you’d “have to really try”.

I use a Zyliss silicone-rubber shallow spoon/spatula for stirring and mixing; it works very well. (There’s a stiff plastic spine inside the stem of the Zyliss thing. Pull (push?) off the silicone part now and then to clean it. Push it back on, don’t pull (as with socks)).

I tend to drip a little detergent and lots of water into pans, bowls, and dishes after eating, and let them soak for a while; they are so much easier to clean, that way. Dishwasher? I live alone, modest income; my having one would be quite silly and waste energy. Of course, this cleans up quite easily, but it also tips over easily when placed into the sink by itself. OK, so put it into a bowl, or make it lean against the side of the sink. No sweat.

Note the hole for hanging. That makes complete sense.

If you lift it out of the pan while the pan is still steaming, or shortly thereafter, you’ll need two “hot mitts” or such and both hands; the flange extensions are too narrow for single-handed gripping. (I can imagine a “spider” gripper with a handle and maybe three legs, hooks at their ends, but the hooks /must/ not slip off. The flange is not rolled down; it extends straight out.)

Interesting that the manufacturer’s Web site has no photos of this, standing alone; they hide its shape! Thanks to Amazon for a good photo.

A quite-small black spot or two on the outside is apparently an accidental spatter of the inside, darker coating; of course, it’s cured. I didn’t try to remove it.

Really glad I bought it! Will be in use daily. Not cheap, but, it might well outlast me! (I’m 74).

Haven’t tried it as a party hat; wouldn’t want to drop it, though.

This double boiler works well with several sizes of pans. The chocolate melts quickly, and except for getting the chocolate out of the folds in the metal, which is a bit of a challenge, it comes out fine.

Just love this double boiler. I use it mostly for making white sauces. The coating on The double boiler makes clean up a breeze. The inverted dome shape keeps the need for stirring to a minimum. I plan on purchasing more as gifts.
